The Full Immersion Cooking Class is a comprehensive culinary experience designed for those who wish to understand Peruvian gastronomy from its historical roots to its practical execution.
During 3 hours you will live a sensory and participatory journey where:
- You will learn gastronomic history.
- You will taste tropical fruits.
- You will discover Andean products.
- You will participate in a pisco tasting.
- You will prepare two emblematic Peruvian dishes.
No previous cooking experience is required.
Methodology – 100% Participatory Class
Each participant cooks, mixes, cuts, and plates. It is not demonstrative: it is practical and interactive under the direct supervision of the instructor chef.

The 6 Steps of the Experience
Step 1: The Beginning – History and Culture (30 minutes)
Introduction to Peruvian biodiversity and its influence on gastronomy.
Topics include:
Peru’s culinary geography.
Pre-Inca, colonial, and contemporary influence.
Novo-Andean concepts and fusion cuisine.
Step 2: The Exotics – Fruit Tasting (20 minutes)
Guided tasting of seasonal tropical and Andean fruits:
Sweet, acidic, and bittersweet flavors.
Andean superfoods.
Explanation of nutritional properties.
Step 3: Colors, Aromas, and Textures (30 minutes)
Visit to the Interpretive Center “El Mercado,” inspired by the traditional San Pedro Central Market.
Here you will discover:
- Varieties of Peruvian potatoes.
- Different types of chili peppers.
- Giant corn from the Sacred Valley.
- Quinoa and Andean grains.
A more organized and educational space to understand the local market without leaving the workshop.
Step 4: A Sea of Flavors – Ceviche Preparation (30 minutes)
You will learn to prepare classic Peruvian ceviche using fresh fish.
Techniques you will master:
- Proper fish cutting.
- Preparation of leche de tigre.
- Balance between acidity, spiciness, and freshness.
- Traditional plating.
Step 5: Pisco O’Clock – Tasting and Mixology (45 minutes)
We will discover Peru’s flagship spirit.
Includes:
- History and denomination of origin of pisco.
- Guided tasting.
- Preparation of:
- Pisco Sour
- Chilcano de Pisco
Step 6: WOK-ing Time – Alpaca Lomo Saltado (15 minutes)
Each participant will prepare their own Alpaca Lomo Saltado, an Andean version of the Peruvian classic.
You will learn:
- Wok stir-frying techniques.
- Temperature control.
- Integration of Andean ingredients.
- Final presentation of the dish.
